Eggs and bacon are one of the most beloved breakfast combinations across the world. Their rich flavors and satisfying textures create a morning meal that pleases everyone. Over the years, this duo has become a staple, often spotted on breakfast tables and diners alike.

I have no way to pretend to be the initial recipe creator for this dish, it’s just a reminder to sometimes make your morning eggs and bacon in a more interesting way than laying next to each other. - Start by setting the oven to 175 – 180 degrees Celsius or 345 – 355 Fahrenheit. You don’t need to grease your muffin tin as plenty of bacon fat will melt away.
- Pad and line the tin holes nicely with 4 slices of bacon each. Farmhouse bacon can be thicker, so change the number of rashes for each nest to 3 or even 2.
- Slice a leek and wash the rings thoroughly on a sieve under a warm water flow. The leeks like to collect some soil and dirt in between their layers, so washing only outside is not enough.
- Carefully crack your eggs into each nest – ideally by not breaking the yolk, but no big deal if it happens. It may seem that the eggs don’t fit in, but if you pour them slowly, they hold their size and won’t run out.
- Grind or sprinkle some black pepper to each. I advise you to not add any salt as the bacon is giving more than enough.
- Put the pan on the center rack of your oven and let them sit there 17 -20 min, depending on if you want the yolk to be softer or harder. It will no be too much flowing even by 17 minutes, because the idea of this dish is to be able to snack it from the hand, when cooled down a bit.

The first way to prepare bacon and eggs (how to make eggs and bacon in muffin tins) is from my dear Grandpa’s collection as he and Grandma left me some cookbooks. They were quite modern and not the kind of books that you might think would inherit from grandparents – some vintage tattered black and white pieces of work without any food photos – not at all, they liked to be aware of the newest trends in the culinary world and they regularly bought some new books (by now they’re retro too of course) but more like 20-30 years retro, instead of 60-80.
That’s why I’ve never got used to the real old books, where you can’t see any pictures of the food and the final result. Ipersonally just prefer to see a colurful photo next to the recipe. But I know, for many people some legendary photoless books are priceless.
