When developing the recipe for these cookies with an aim of taking part in @eatcaptureshare this year’s food photography challenge, I had no idea that they’d turn out SOOO good and I will have a new awesome recipe in my back pocket as a bonus. ⭐️

I also wanted to thank @littleplantation for curating this lovely challenge and the guest judges @gourmetglow and @gastrostoria, who all are such warm personalities. 🥰

The 🏆 for the challenge went to @preethi.venkatram and I TOTALLY agree, because she makes miracles with her camera! 🦄

These cookies are VERY plump and not flat at all, which is amazing because they contain 0 baking powder and no egg!!

BUTTERY SWEET AND SALTY OATMEAL COOKIES
8 pretty big cookies
Prep: 40 min

- 100 g butter
- 1/2 dl sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 dl cashews (grounded roughly in a blender or food processor)
- 1 dl instant oats
- 1 dl all purpose flour
- 1 dl wholegrain wheatflour

Start by turning your oven to 200 C / 390 F. Cream the butter with sugar in a stand mixer or with a hand mixer (or with a whisk and muscle! 💪🏼)

Add cinnamon and ground cashews and flours that have been blended with both each other and the salt. Mix everything thoroughly and shape into a ball (check out the photos I added to this post).

Then divide the ball into 8 smaller balls. Place onto a prepared baking tray (meaning covered with a baking paper 😜) and bake in the center part of the oven for 8 minutes. The oven mode is not that important - can be regular. If using conventional, be alert - you might want to take them out earlier to avoid burning.

Let them cool a bit, but try the first one, when still luke warm! 👌🏻😋 They really melt in your mouth, I guarantee that, they are filling and actually they’re not that unhealthy too because of the alternative flours, cashews and oats! 🥳 And cinnamon is an extremely healthy spice by the way, which is boosting your digestion in a mild and natural way.
